I'm Jon. I conceived Best Restaurants Gdańsk the same way I built Best Restaurants Kraków: a short list judged on merit and atmosphere, not popularity or price.

I have not yet eaten my way through Gdańsk. The ninety rooms on this site were chosen with the method I spent years proving in Kraków — reading the plate, the room, and the reputation, then cutting hard. Gdańsk has hundreds of restaurants. The Concierge Collection has ninety. That gap is the point. What remains is judged, not gathered.

How I choose
Great dining is rarely just about the food. Pimiento has Wagyu cuts, a beautiful inner courtyard, and an atmosphere that earns the price. That is a Kraków evening I have sat, more than once. The Gdańsk lists use the same standard: craft and atmosphere in equal measure, pinned to Główne Miasto, Stare Miasto, or Wyspa Spichrzów — not a postcard of another city.
When I sit a Gdańsk room in person, that page will carry a visited mark and a personal note. Until then, the Collection is the desk working ahead of the first booking.
